Do you follow a grain free diet? Full disclosure, I don't! I can't imagine life without a good, homemade loaf of bread once in a while! But I do like to make healthy swaps wherever I can. Baked goods usually contain white, all-purpose flour, which has minimal, if any, nutritional benefits. Swapping out the flour with ground oats is a great way to get some added nutrition to a favorite snack! Oats contain protein, fiber, antioxidants, and vitamins like copper and zinc, making them a more nutrient dense option than your typical AP flour. The peanut butter adds a nice peanut flavor and some extra protein! The chocolate chips add chocolate, and that's all I need to say about that!

Flourless Peanut Butter Chocolate Chip Cookies

10 min 11-13 min 25 min 24 cookies
2 cups oats (ground into flour)
2 cups peanut butter
2 tsp vanilla extract
1 egg
1/2 cup maple syrup
1 cup chocolate chips
Preheat oven to 350 f. Add all ingredients (except chocolate chips) to stand mixer and beat on medium speed for 1 minute, scraping down bowl halfway through. Add chocolate chips and stir in. Line a baking sheet with parchment paper. Scoop out 2 tsp dough balls, roll them in between the palms of your hands, then press them down slightly on the parchment paper. Criss-cross the top with a fork. Bake for 11-13 minutes.
