Thanksgiving is just around the corner and no table is complete without dinner rolls. These are not your average dinner rolls, these are made with honey and spelt flour, making them sweet and nutty and full of flavor. Your guests will be begging for more after just one bite of these perfect rolls! Make your Thanksgiving a truly happy one this year!

Honey Spelt Dinner Rolls

3 cups spelt flour
2 cups all purpose flour
1 tbls active dry yeast
1 tbls salt
1 3/4 cups lukewarm water
1/2 cup milk
2 tbls olive oil
2 tbls honey
Honey Butter Glaze
6 tbls butter
2 tsp honey
Add all ingredients to stand mixer with paddle attachment and mix on medium speed until well combined, then an additional 2 minutes. Dough will be sticky. Turn out dough into well oiled bowl and cover with a towel. Let rise until doubled, about 1.5 hours.
Punch down dough and sprinkle with flour. Cut or tear into 12 equal pieces, then roll and tuck into balls. Place the balls evenly spaced into a 9x13 casserole dish covered with parchment paper. Cover. Let rise until the balls are puffy and doubled in size, about 20-25 minutes.
Preheat oven to 460 F. Bake for 15 minutes, lowering the temp to 450 F if the tops of the rolls start browning too quickly.
Remove from oven and let cool for 5 minutes. During this time, make the glaze. Melt butter and honey together, stirring well. Pour over the top of the slightly cooled rolls and lightly sprinkle with sea salt.
