Sourdough discard turns this banana bread into a tangy, moist treat! Transform those old bananas into the best banana bread!

Sourdough Banana Bread
Prep Cook Total Yield
15 min 1 hour 1 hr 15 min 3 loaves
1 cup butter, room temp
1 1/2 cup coconut sugar
5 eggs
5 big overripe bananas
1/2 cup sour cream
2 cups sourdough discard
2 cups all-purpose flour
2 cups whole wheat flour
4 tsp baking powder
1 tsp baking soda
pinch salt
2 cups smashed walnuts
Preheat oven to 350. Grease loaf pans.
In a stand mixer, beat butter, sugar, eggs, bananas, sour cream, and sourdough discard on high for 2 minutes.
Add remaining ingredients and beat on medium until fully combined.
Pour into loaf pans and bake for 50-60 minutes, or until toothpick inserted in center comes out clean.
Allow to cool for 10 minutes or so, slice and top with butter!
